Raw enthusiast: In search of poke in Tacoma

I call this the poor-man's sushi only because of its very affordable pricetag, or at least in contrast to the $14 it will cost you at other restaurants. This poke is simply prepared with soy and a sprinkle of sesame seeds over a salad of sliced cucumbers and lettuce. It's $3.50 at Sushi Station in Puyallup.

Poke can be simple or complicated, tame in flavor or boldly spiced. The one constant in the poke equation is this: the foundation starts with cubes of raw tuna. Beyond that, a poke recipe is open for interpretation. Or at least it is in the hands of local chefs. Jackie Young Koh always wanted a fusion restaurant. And now he has that in TwoKoi, where he merges his Japanese and French culinary training with his native Korean palate.

"There were no fusion restaurants here, and I really wanted to try it," said Koh, who previously worked at Tacoma’s Fujiya.

Add one more culinary twist to Koh’s repertoire: Midwestern.
