Niche spirits: New South Sound distilleries are on the way

South Sound already is home to four craft distilleries producing gin, vodka and whiskey. Coming soon are two more distilleries expected to receive their state and federal licensing sometime this summer. The micro distilleries are examples of the next phase of craft distilling in Washington state – niche distilling.

Shopping for local grown-up beverages now extends beyond wine and beer to hard liquor. Four craft distilleries opened in the South Sound in 2012 – making craft distilleries one of the fastest growing beverage trends this region ever has seen (will cideries be next? Please?). Opening Friday: South Sound’s fourth craft distillery

Pierce County’s newest craft spirits distillery opens Friday. Port Steilacoom Distillery is a micro distillery started by spirits enthusiasts who will keep their day jobs working in health care. They’ll operate their tasting room in downtown Steilacoom on Wednesdays through Sundays.

The distillery joins three others producing gin, vodka and whiskey in Pierce County. All three opened this year, the outgrowth of a statewide trend that got its start five years ago when liquor laws changed to allow for craft distillers in Washington state.

Port Steilacoom will produce small batches of vodka and gin, with plans for a specialty spirit the distillers describe as being in the same flavor palate as rum, only made with honey, not cane sugar. Read more »


DIY whiskey? It’ll be possible after Gig Harbor’s Heritage Distilling opens

The first make-your-own spirits distillery is opening in the country and it’s right here in Gig Harbor. Heritage Distilling Company has been in progress for more than a year, the project of Justin and Jennifer Stiefel. The grand opening for the distillery will be this weekend.

What makes Heritage Distillery such an intriguing business is that spirits enthusiasts can prepare small-batch spirits legally at the distillery thanks to its federal licensing, according to the operators. Unlike wine and beer, which are legal to make at home in small batches for private consumption only, distilling spirits at home is illegal, not to mention dangerous and potentially explosive.
