Maxwell’s debuts its summer menu, Bite Restaurant features weekly market specials

Summer produce is here and menus around town reflect the bounty. The Bite restaurant at Hotel Murano is creating weekly specials based on produce Chef Matt Stickle purchases at the Tacoma Farmers Market.

Meet Vivian Irish: The new chef at Maxwell’s Restaurant + Lounge in Tacoma’s St. Helens neighborhood

Vivian Irish is a Tacoma native and 2007 graduate of Tacoma School of the Arts. In April, she was named the new executive chef of Maxwell's Restaurant + Lounge. She replaces Matt Colony, who went to work at a pair of restaurants in Poulsbo. Photo by Lui Kit Wong/Staff photographer

A few weeks ago, I reported here that executive chef Matt Colony had left Maxwell’s Restaurant & Lounge to run two restaurants in Poulsbo. Taking over the helm of Maxwell’s will be Vivian Irish, a young chef and Tacoma native who got her culinary start at Pacific Grill under the direction of Aaron Valimont, former executive chef, and Pacific Grill owner Gordon Naccarato. Irish also is a graduate of the Tacoma School of the Arts.

Rumor mill: Maxwell’s Restaurant + Lounge is not closing. Yes, that means you can still get a Walker burger.

The buzz on Twitter yesterday was that Maxwell’s Restaurant + Lounge was rumored to be closing.

Not so says Executive Chef Matt Colony, who also runs the daily operations at Maxwell’s. If the restaurant is closing, that’s news to him. That’s good news for us burger lovers. The Walker Burger lives. (Not to mention the divine farro risotto of which I am newly obsessed).

Chew on this: Farro risotto at Maxwell’s Restaurant + Lounge in Tacoma

Roasted onion and goat cheese risotto is made with farro at Maxwell’s Restaurant + Lounge in Tacoma.

Risotto at Maxwell’s Restaurant + Lounge is a dish made simply: Vegetable stock, herbs, seasoning, onions, goat cheese and Parmesan.

Executive Chef Matt Colony does include one more ingredient that gives the dish a nutty twist – he makes his risotto with farro, a chewy grain with a firm bite (it’s also spelled faro). The resulting risotto is deliciously nutty and firm, yet also creamy and rich from the goat cheese and lightly sweetened with slivers of roasted onions.

“It’s a complete grain. I love using it in risotto. I’ve cooked it for an hour before, and it never overcooks. It still has bite to it. I like the chewiness,” explained Colony Read more »

Maxwell’s is open, the phone is just nutty

Maxwell’s Restaurant + Lounge is not closed, but it is having phone difficulty. The phone rings to a disconnected message. I just got off the phone with Chef/manager Matt Colony, who said the restaurant is open and fine, it’s just a phone fluke. “When people move out of this building, sometimes they accidentally disconnect our phone,” said Colony. In the days before Valentine’s Day, that can be a real mess for diners who may think the restaurant is closed. He wants diners to know they are open.
