Liquor application: Aviateur in downtown Tacoma

Downtown Tacoma restaurant watchers take note of this high-profile space: An application for a liquor license has been filed with the state liquor control board for a restaurant called Aviateur at 1498 Pacific Ave.

According to the application, the restaurant is slated for the space that housed Zara Mediterranean from August 2011 to October 2012.

That prime downtown restaurant space inside the Umpqua Bank Building at 15th and Pacific has been empty almost as much as it’s been occupied. Sea Grill held that space from 2005 to 2009. That restaurant was a sister establishment of regional steakhouse El Gaucho. Zara’s tenure was short lived – just more than a year – and the space has been vacant since it closed in 2012.

The applicant for Aviateur’s liquor license is Bertrand V. Young. According to the application and other public records, Young is listed as an owner of La Creme Brulee, the French restaurant in Steilacoom. When reached by phone, Young declined to comment on Aviateur.

A Facebook page and website describe the restaurant as a French diner and the menu is described as “Fondue, French, Steakhouse.”
