Two Washington-based burger chains – Blazing Onion and Bob’s Burgers and Brew – will open new South Sound locations in the coming days. Here’s when.

Blazing Onion Burgers: The Tacoma outpost of this regional chain opens Sunday at the Tacoma Mall – just in time for the Seahawks game. The Northwest-grown burger chain has three locations north of Seattle and one in Gig Harbor. The menu at each lists more than 25 burger combinations – and two vegetarian options worth noting.  Last year, the restaurant’s house-made Farmhouse Vegetarian Burger made my list of top veggie burgers in the South Sound. The burger chain also offers a black bean patty.  I award bonus points to any chain with a flexible menu that doesn’t skip our vegetarian friends. Did I mention the turkey burgers, too? Bob’s Burgers and Brews: The opening of the Puyallup South Hill location has been a bit of a guessing game, but earlier in the week, the restaurant announced there would be an inspection Friday and a soft opening announcement would be made soon after. The restaurant was training new employees this week, too. This Washington-based chain is brand new to the South Sound. You have to head north of Seattle to find the closest one – or to the Eastern side of the state. When I spoke with franchise owner Jeff Roberts last year, he said the South Hill outpost (opening across the street from Sunrise Village) would be a 6,100 square foot restaurant with indoor and outdoor dining areas and a 48-seat banquet room. He noted that the restaurant would go beyond its burger and sandwich menu and would offer breakfast (although that may not be until after the initial opening weeks). Find opening updates here. The chain is known for flame-grilled burgers in myriad configurations. UPDATE: The restaurant has opened as of Monday, Jan. 20.

Bonus burger news: Mary’s Burger Bistro in downtown Tacoma has reopened after a brief closure for a light remodel. The restaurant upgraded its seating and added chalkboard paint to the walls. Here’s big news for char-burger fans. They added a charbroiler to the kitchen. Find Mary’s at 2301 Pacific Ave., Tacoma, 253-779-0777.
