The Gourmet Burger Shop is inching closer to its move near Gig Harbor’s waterfront. Expect a late May opening.
Gone will be the long drive past the Purdy Spit, the propane-heated grill and the painfully tiny dining room.
Sticking around will be chef’s burgers, shoestring fries and beet chips. Buns still will be made by Gig Harbor’s 3 Clouds Bakery.
The two-year-old Gourmet Burger Shop always felt a mismatch – a downscale joint serving upscale burgers. The style and quality of burgers there were something like what you’d find in the bar at Pacific Grill or Crown Bar, both in Tacoma and restaurants that made my top-20 burgers list a few years ago.
Chef-owner Travis Hightower expected to make the move from his remote burger shack earlier this year, but construction and permit delays slowed progress at the restaurant’s new home – the site that previously held Le Bistro before it burned in a fire in February 2010 (4120 Harborview). Hightower closed his Purdy Spit burger shop a few weeks ago to focus on the move.
Diners at the new Gourmet Burger Shop will still order at the counter and the restaurant will carry the same menu with a few additions of turkey and salmon burgers. Hightower has applied for a liquor permit and intends to sell local beer. Prices will increase, he said. The building is outfitted with a drive-thru, but Hightower said it only will be used for espresso and those who call in their orders ahead of time. Also opening in Gig Harbor, although there’s been no opening date announced, is an outpost of the Seattle-based burger chain, Lunchbox Laboratory. That restaurant will open in Point Fosdick Square, near the new Michael’s.

New owners at Green.House: Scott and Gail Fuller have purchased Green.House in Uptown Gig Harbor. The duo previously were partners at Budd Bay Cafe in Olympia. Scott Fuller will act as chef, replacing Matt Colony, who has returned to cook in Friday Harbor. Colony was chef there for less than a year. He replaced Robert Green, the chef who opened the restaurant in 2010.
