An outpost of the Seattle restaurant Lunchbox Laboratory will open on Point Fosdick Drive. A spokeswoman for the restaurant chain confirmed the restaurant will open in Gig Harbor, but no opening date is scheduled.
The chain has a location in Seattle and in Bellevue. Here’s a link to the Lunchbox Laboratory’s menu. Diners will find a handful of specialty burgers plus a build-your-own-burger option. The restaurant’s burgers have received press from Gourmet magazine and other national food media. I don’t know much about the restaurant, but many years ago at a different newspaper, I wrote several articles about the company’s founder Scott Simpson, who died in 2011. Simpson was an inventive chef who made a name in the Seattle restaurant scene when he owned the Blue Onion Bistro near the University of Washington. His style of scratch American cooking came with quirky and playful twists. His was a style of American comfort cooking diners can find on many menus today, but not so much 15 years ago. Simpson’s dining room was like a junk shopper’s dreamscape – the dining room adorned with vintage toys and oddities. Chairs were rickety, the food was not.
Lunchbox Laboratory joins a crowded Gig Harbor burger market. Blazing Onion will operate nearby and the Gourmet Burger Shop is expected to soon move from its tiny restaurant near the Purdy Spit to a remodeled building that formerly held Le Bistro before it was destroyed by a fire in 2010 (background story of the move here). Owner Travis Hightower said he’ll serve burgers at this current location through the first week of April. Expect a move after that.
