The Lake Tapps doughnut shop that’s duplicating itself on Sixth Avenue in Tacoma plans a Nov. 4 opening. Here’s a story I wrote back in August, but to bring you up to date if you don’t feel like clicking that link – the shop is owned by Shannon Patten, who opened Legendary Doughnuts in the Lakeland Hills neighborhood in May 2010 with the aid of her husband and their two sons – the oldest is a bakery employee and the youngest is the chief doughnut taster. Before opening Legendary Doughnuts, Shannon worked in the food business as a cheese company representative. Husband Ken’s career is smirk-worthy in the context of owning a doughnut shop – he’s a police officer.
The style of doughnuts is easy to describe – think Portland’s VooDoo Doughnuts, a bakery that produces humorous pastries like the bacon-topped maple bar and doughnuts made with Froot Loops and Cap’n Crunch cereals. Patten takes that concept and stretches it to famous people – most of her doughnuts are fashioned after notable entertainers or historical figures. There’s the Albert Einstein – topped with white coconut. The Oprah is a maple bacon bar. The Scarlet O’Hara is a red velvet topped with a candy cigar. She also makes cereal coated doughnuts like Fruity Pebbles and when it’s Girl Scouts cookie season, Patten plays around with Thin Mints doughnuts (some of my favorites she makes). Ingredients range from wacky to weirder – from Guinness beer to sea salt. Doughnut purists who are a little freaked out about what I just described, not to worry – she’s got the usual doughnut suspects covered, too – from fritters to cinnamon twists.
The Tacoma Avenue shop will be a duplicate of the Lakeland Hills bakery – serving from early morning to evening with the same doughnut menu. Patten also is considering keeping the shop open later on weekend nights.
