Executive Chef Matt Colony’s last day of cooking at Maxwell’s Restaurant + Lounge was Saturday.
Just in case there is any confusion, Colony emphasizes that Maxwell’s is not closing its doors. After rumors circulated in February that the restaurant was closing, Colony was quick to put on the record then and now that the restaurant was not closing. He said via email, “It is NOT closing!” (only in the email, the entire sentence was underlined for emphasis.)
Why is he leaving? From an email from Colony, “I have an opportunity elsewhere to run a couple restaurants just worrying about food again, with the chance to own in a few years. Just something I can’t pass up.” I sent a follow-up email to Colony asking about his new job, but we have not yet spoken. Maxwell’s posted on its Facebook page that Colony will be going to Burrata Bistro and Paella Bar, Italian and Spanish restaurants, both located in Poulsbo.
So who will cook at Maxwell’s? Colony said via email, “My Sous Chef Vivian Irish will be taking over the kitchen, Mike Strong will be in charge of the front and Dave Benefield will continue as bar manager.”
