After reading my blog post yesterday about chicken and waffles at Crockett’s Public House in Puyallup, William Mueller, the owner/chef of Babblin’ Babs Bistro in Proctor, sent me a pic of his funky spin on the pairing of meat and waffles – he makes his with cod. From an e-mail he sent me, here is the menu description, “Happy Cod & Waffle:
Fresh caught in the Bering Sea and brought to us by Capt. Charlie each loin gently dusted with New Orleans spices; then oven roasted. Our famous Riesling waffle dolloped with cream of leeks, bacon, and Bourbon (I see you smiling and now you know why the cod is happy!!). Garnished with sweet potato hash and fresh seasonal fruit.” A side of grits comes with the dish. It’s on the menu for a few more weeks, $16.95.
