Soup for you! Infinite Soups turns three

Happy anniversary to Infinite Soups. Tomorrow, Feb. 27, marks the third anniversary for the take-out soup kitchens that niche specialize in soup and nothing else. Like last year, they’ll celebrate with cupcakes from Corina Bakery. They invite all to stop by and get one. To mark their second anniversary, they’ll also launch new hours for their second location, which now will be open on Saturdays. The restaurant opened a second outpost at Sanford & Son Antiques just seven months ago, but already they’re looking forward to a third location.

But hold that thought. Owner Wendy Clapp said a third location of the restaurant is in the distance, not the immediate future. She’s just plain tired.

“It’s a stress ball, and not just for me, but for everybody (to open another store). To do it, it’s kind of like you have to take a year off in between each one or you’ll just kill each other. We need some time. We’re going to take a year to relax again,” said Clapp who runs the two Infinite Soup locations with husband Todd DeShazo and Clapp’s daughter Laura Adams.

New soups at Infinite: “We’ve been playing around a lot. A real popular newcomer is Italian Bollito Misto. It’s got roast beef, sausage, greens and topped with fresh pesto.” Also, Clapp said gorgonzola tortellini has been wildly popular. “You make a pot and it’s gone an hour after we make it every time. It’s cream, fresh basil, chicken breast, gorgonzola cheese and that’s it.”

Back to market: Clapp and crew will be back at the Tacoma Farmers Broadway market this summer.

Infinite Soups Lunch Counter at Sanford & Son
Where: 744 Commerce, Tacoma
Hours: 11 a.m.-2 p.m. Mondays-Fridays. The lunch counter now will be open Saturdays, from noon-5 p.m.
