Scanning Puget Sound restaurant job ads on (aka restaurant critic porn), I found out that Olympia does not currrently have an eco-friendly restaurant. But it will soon:

Opening in April 2007, Vitals Café is Olympia’s first eco-friendly, natural food restaurant. We take our ingredients seriously at Vitals Café. You will find no hormones, trans-fats, or hydrogenated oils. Just plenty of what nature intended: great taste. Vitals Café and our co-located sister company, Daily Dose Spa, are dedicated to helping people regain balance in their lives by offering sustenance, relaxation, fitness, and indulgence. We are located across from Group Health on Lilly Rd. in a brand new, green-built wellness center, called Naturally Healthy. All businesses contained within have gone out of their way to operate under guidelines that are healthy for our employees, our customers and the Earth itself.

Vitals says its cooking system is set up to be healthy and environmentally friendly. Its kitchen won’t use harsh chemicals.

Meantime, Blue Lotus Cafe’, a new place on Franklin Street in downtown Olympia, seeks a part-time baker who possesses “a world view that embraces the importance of sustainability.”
