Blue Olive opened along the rejuvenated Thea Foss Waterway in 2004. New management took over in August. Blue Olive closed last week. Its owner says he’ll reopen.

Blue Olive owner Kevin Glagavs says the Foss Waterway martini bar will be back. Glagavs said the Blue Olive’s closure last week is temporary.
"We were vandalized," he said, referring to a broken window on Blue Olive’s patio door. "We wanted to take this opportunity to do some renovations. Three years in the restaurant and nightclub business kind of takes its toll."
Kashi Management, the South Sound firm that’s operated taverns and dance clubs, assumed management of Blue Olive in August. Kashi Management founder Ali Mehdizadehkashi told me that last week was his final week managing Blue Olive.
Glagavs said Blue Olive’s original owners have reassumed management. He said Blue Olive would reopen sometime in early 2007.
Whenever Blue Olive opens, its kitchen will start from scratch: There’s no food in the place. Glagavs said he donated everything except canned goods to the Tacoma Rescue Mission – about $3,000 worth of wholesale goods.
Glagavs wouldn’t confirm that executive chef Roman Aguillon has a new gig in town, but he did say, "There will be a new chef."
"We’ll begin to tailor toward one specific concept," he said of Blue Olive’s menu, which blended Northwest and Asian and recently flirted with Greek. "We’ll narrow our target market and specialize in one specific type of food. It may not be Italian or Mexican. We’re not sure yet."
As for Blue Olive’s nightlife aspect, Glagavs said, "Are we going to have loud Saturday night DJ bumping? No. But we’ll have music. Just like there’s background music in any restaurant."
He said he and his partners are exploring other uses for Blue Olive’s kitchen, like packaging pre-made meals for Thea’s Landing condo-dwellers.
"We put a leap of faith and a lot of money on the table in hopes that Thea Foss Waterway would reach its pinnacle," Glagavs said.
