Whatever the cost, mole salami was tongue-taking: a log of pork innoculated with chocolate, the smoky bite of ancho and chipotle peppers, and the musky-sweet flush of cloves and cinnamon. It’s good enough to make me think of Metropolitan Market’s high price as a savings — a savings of not having to drive to Salumi to sate my Salumi cravings. Besides, Salumi is only open 11 a.m.- 4 p.m. Tuesdays-Fridays. I could eat the stuff 24/7.
