TACOMA: Bimbo’s recipes lack key ingredient

I so enjoyed the article on Bimbo’s Italian Restaurant and recipes (TNT, 6-25) as our family went there often while I was growing up.

I hate to be the bearer of bad news, but any Italian knows that a pasta sauce recipe cannot be duplicated. No matter how many times you try even with the cook showing you, it will not come out the same.

There are intangible ingredients that become part of making these enigmatic sauces. The person’s heart, soul and uniqueness somehow get infused into the preparation and it becomes one’s own, never to be duplicated. Italians (and non-Italians) complain of this phenomenon. So I laugh when I read that the city has possession of these treasured recipes.

Also, the success and charm of Bimbo’s was due to a time, place and era that are long gone. It was a seedy joint, dumpy and had a sleazy air to it, but that was part of the charm and magnetism.

In 1945, my dad’s train pulled into the Union Station bringing him home from the war. And did he come rushing home to see his loved ones? Heck, no; he couldn’t get to Bimbo’s fast enough to have pasta first and share nostalgic memories.
