TACOMA: Give us a taste of Bimbo’s legendary sauces

Re: “The strange-but-true story of Bimbo’s legendary sauces” (TNT, 6-25).

I really enjoyed the article about Bimbo’s Italian Restaurant. Although I never had the opportunity to eat there, I now wish I had. I have no relationship with the Rosi family and base these comments solely on the article.

My guess is that in 2001, when the city bought out Bimbo’s, it had no intention of letting those recipes age and then try and make a killing in the future, much-improved economy. In fact they probably had no idea what to do with them other than put them in an envelope and shove them in the back of safe.

After 12 years, Jerry Rosi is starting to think he might like to make pasta again, since he bought his name back from the city – something about pasta, sauce and making people happy; just ask Joe Stortini. Based on the attempts in the past and our wonderful economy, I think it would be great good will gesture for the city to provide Rosi his recipes back. If the city still wants to get a return on its investment and make a buck, charge him $500 for the recipes and call it a “safe keeping” fee.

The worst thing that could happen is he opens a new restaurant, starts paying taxes and helps the Tacoma economy grow. The best that could happen is that Tacoma gets a piece of history back, and I will get to try his sauce.
